Fajitas Cheesy Casserole
I have always been a big fan of a casserole. I get both my main protein and side dish in one. They are great for adding in extra vegetables too. This Fajitas Cheesy Casserole has incredible flavor and is full of good fats, protein, fiber, and plenty of veggies that even picky eaters will love.

Fajitas Cheesy Casserole
Ingredients
- 1 ¼ lb chicken thighs, skinless/boneless
- 2 Tbsp olive oil
- 12 oz riced cauliflower, steamed and squeezed of excess water
- 12oz broccoli florets, steamed and squeezed of excess water
- ½ red bell pepper (100g), chopped small
- ½ green bell pepper (100g), chopped small
- ¼ Cup red onion (35g), diced
- 1 Tbsp +1 tsp K4K Taco seasoning *see tips
- ¼ Cup butter, room temp
- ¼ Cup heavy cream
- ¼ Cup chicken broth
- 4oz cream cheese, softened
- 1 Cup cheddar cheese, shredded
Instructions
- In a large skillet heat 1 Tbsp of olive oil over medium high heat. Season the chicken with 1 tsp of K4K taco seasoning then add the chicken to the skillet and sear for 8 mins then flip and sear for 6 more mins. They may not be 100% cooked through at this point but that is fine! Chop it into bitesize pieces and set it aside in a large bowl.
- In the same skillet add the other Tbsp of olive oil and sauté the peppers and onions for 3-4 mins (you don’t want them very soft). Set them aside with the chicken. In the same skillet add the broth, butter, heavy cream, cream cheese, and remaining seasoning. Mix well over medium heat until the sauce is smooth and creamy. Pour the sauce over the cooked ingredients in the bowl(peppers/onions/chicken), add the cauliflower, broccoli, ½ Cup shredded cheese, and mix well. Pour this back into the skillet or into an oven safe dish. Sprinkle with the remaining shredded cheese and bake for 20 mins at 350F covered. Uncover and broil for 5 mins.

K4K Taco Seasoning
(makes multiple servings)
1/2 tsp Garlic powder
1/4 tsp Onion powder
1⁄2 tsp Oregano
1 tsp Black pepper
1 Tbsp Chili powder (use 1⁄4 the amount if you don’t like spicy food)
1/2 tsp Paprika
1/4 tsp Red Pepper Flakes
1 tsp Salt
1 1/2 tsp Cumin, ground
