Pesto Chicken Skillet

Pesto Chicken Skillet
Ingredients
- 1lb chicken breast, skinless/boneless cut into bite-sized pieces
- 1 Tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1 Tbsp olive oil
- 1 tsp Italian seasoning
- ½ Cup (65g) red onion, sliced
- 4 garlic cloves, minced
- 1 Cup (158g) cherry tomatoes, halved
- 1 Cup (150g) red bell pepper, diced
- 1 Cup (150g) green bell pepper, diced
- ½ Cup low carb pesto sauce
- ½ Cup heavy cream
- ½ Cup chicken broth
- ¼ Cup (10g) FRESH basil, shredded
- 1 tsp salt
- ½ tsp black pepper
- 4 oz mozzarella pearls
Instructions
- Season the chicken with the chicken seasonings and toss. In a large skillet heat the olive oil over medium high heat. Once the oil is hot add the chicken into the pan and sear for 8-10 mins tossing occasionally until cooked through and a bit golden. Set the chicken aside on a clean plate.
- In the same skillet Add the olive oil and heat over medium high heat. Add in the red onion, garlic, and bell peppers and sauté for 3 mins UNTOUCHED. Add in the tomatoes and sauté for 4 more mins. Set the veggies aside on top of the chicken on the plate.
- In the same skillet add the heavy cream, broth, and remaining seasoning and bring to a boil over medium high heat. Once it reaches a boil allow to continue boiling for 3 mins.
- Add in the pesto and stir. Add in the chicken and veggies and stir well. Sprinkle with the mozzarella and basil and simmer for 5 mins covered.
