Roasted Greek Salmon

This is a recipe from my Cookbook “ The Beginner’s Keto Meal Plan: A Six-Week Guide to Starting Your Keto Diet the Right Way”  . My roasted Greek Salmon is colorful and flavorful- giving you all the Greek vibes! This salmon is one of my favorite dishes to prepare,producing a succulent, flaky salmon adorned with a delicious and vibrant medley of textures and tastes. It truly captures the essence of the Mediterranean in every bite. While this recipe is low carb and keto friendly, it is just a delicious meal made with whole food ingredients that anyone will love!

Savor the vibrant flavors of my Roasted Greek Salmon – a culinary masterpiece (if I say so myself) that combines the richness of salmon fillets with a Mediterranean-inspired topping.

Ingredients

Topping
  • 1⁄ 4 cup (60 ml) olive oil
  • 1⁄ 4 cup (60 ml) lemon juice
  • 2 cloves garlic, minced
  • 11⁄ 4 tsp (2 g) oregano
  • 1⁄ 2 tsp red pepper flakes
  • 1⁄ 2 cup (56 g) feta cheese, crumbled
  • 1⁄ 2 cup (100 g) cherry tomatoes, halved
  • 1⁄ 4 cup (45 g) kalamata olives, pitted
  • 1⁄ 4 cup (65 g) cucumber, diced
  • 1⁄ 4 cup (40 g) red onion, diced
  • 1 tsp dried dill
  • 1⁄ 4 tsp salt
  • 1⁄ 4 tsp black pepper
Salmon
  • 1 lb salmon fillets
  • 2 tbsp olive oil
  • 1⁄ 2 tsp salt
  • 1⁄ 4 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. To prepare the topping, in a medium bowl, mix together the olive oil, lemon juice, garlic, oregano, red pepper flakes, feta cheese, tomatoes, olives,cucumber, onion, dill, salt and black pepper.
  3. To make the salmon, in an oven-safe dish, place the salmon fillets skin side down and drizzle with the olive oil, salt and black pepper. Bake for 10minutes then add the topping evenly over the fillets. Bake until pink and flaky, about 10 minutes.
