S'mores Bars

OMG these bars are decadent! A delicious dessert that brings together all the summer campfire s’mores vibes with a chocolate chip cookie- I mean how can that get any better!? Since Choczero came out with sugar-free marshmallows this year I have been coming up with ways to make use of them. The fact that they can be roasted and NOT fall apart is HUGE! We were actually able to have s’mores over the campfire last summer!

So when a friend was raving over these s’mores cookies she got from Crumble I knew I had to try and come up with a keto version! And this is the result- Keto S’mores Bars! Low-carb, sugar-free, and gluten free with all the delicious flavor of the high sugar versions!

These low carb and sugar-free S'mores bars are the PERFECT combination of the campfire classic mixed with a gooey chocolate chip cookie- with just the right amount of crispy outside!

Ingredients

Crust
  • 2 ½ Cups almond flour
  • ¼ Cup Golden Lakanto or Brown/Golden Erythritol
  • ½ Cup butter, melted
  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350F and line a 9x13 pan with parchment paper. Then start on your crust. Place 2 ½ Cups of almond flour into a large bowl with ¼ Cup of your sweetener.
  2. Pour in the butter and extract, mix well. Press the crust into the bottom of the lined pan.
  3. Now onto the bar! Add your butter to a large bowl. Add in 1 ½ Cups of sweetener and blend. Next mix in eggs and vanilla extract.
  4. In a separate bowl mix together the 2 ¼ Cups of almond flour, ½ tsp salt, and 1 tsp of baking powder and mix. Sprinkle it into the bowl. Fold this mixture (the dry ingredients) into the butter mixture by hand.
  5. If you are using full sized marshmallows, cut them into smaller bits. Keep a handful of the small bits aside(optional). Then add the marshmallow (all of them except the handful) to the dough along with the chocolate chips and fold them in.
  6. Then scoop the dough over the crust.Smooth the dough evenly over the crust and bake it for 25 mins.
  7. Top the bars with those marshmallows you set aside, and continue baking for 5mins.
  8. Allow the bars to fully cool before slicing them.
