Lemon Tart Bars
Ingredients
- ¾ Cup almond flour
- ¼ Cup +1 Tbsp coconut flour
- ¼ tsp salt
- 7 ½ Tbsp butter, COLD
- 2 oz cream cheese, COLD
- 1 Tbsp powdered sweetener
- 1 tsp vanilla extract
- ½ Cup butter
- 1 Cup allulose or 3/4 Cup erythritol/monkfruit
- ½ Cup fresh lemon juice
- ¼ Cup lemon zest
- 6 egg yolks, whisked
- 1 ½ tsp unflavored gelatin
Instructions
- Preheat the oven to 350F. Line a rectangle baking pan with parchment paper.
- In a bowl combine the almond flour, coconut flour, and salt. Take a fork and whisk (or use a food processor)
- Next add in the butter and cream cheese using the fork to mash it into the dry ingredients. You want this to look almost like kinetic sand. You want everything to be well mixed so no one ingredient sticks out.
- Then take the mix and use your hand to form a smooth ball. Flatten the dough out to line the bottom of the pan. Bake for 8-10 mins until lightly golden.
- While the crust bakes start in on the filling. Melt the butter in a sauce pan over medium heat. Then add in the lemon juice, sweetener, and zest and whisk until the sweetener is dissolved (about 2-4 mins). Remove the pan from the heat and let it sit for a min.
- VERY slowly whisk in the egg yolk. Make sure to continuously whisk while adding it in. Whisk continuously for 2 mins.
- Whisk in the gelatin. Whisk for an additional minute. Then pour the mixture into the prebaked crust.
- Bake for 20 mins. Remove from the oven and allow to cool completely. Then cover and refrigerate overnight before slicing.
