K4K OMG Granola Bars

Need a delicious energy packed on the go breakfast or snack? These Granola bars are it! While I have a few versions of my granola bars, these are the most simple to make and require no baking at all! You can make a big batch and store them in the freezer and they keep well. You could also roll them into balls (about 4 balls per bar) and make them as "energy balls" if you don't want to do them in bar form. They are a softer granola bar so I usually store them in the fridge or freezer.

This simple energy packed no bake granola bar is the perfect quick grab and go breakfast or snack!

Ingredients

  • ¾ Cup peanut butter, sugar free
  • 2 Tbsp coconut oil or butter
  • 1 Cup (84g) sliced almonds
  • ¾ Cup (84g) shelled walnuts
  • ¾ Cup (84g) chopped pecans
  • 2 Tbsp- ¼ Cup golden lakanto/monkfruit/erythritol
  • ½ Cup (112g) chocolate chips, sugar-free

Instructions

  1. Line a 13x9 baking dish with parchment paper and set it aside.
  2. In a food processor or blender add the nuts together and pulse or blend on low until the ingredients are uniformly minced/diced (you want it to be about the size of oats). Add this and the chocolate chips to a large bowl.
  3. In a medium pot add the peanut butter, sweetener, and coconut oil together (or melt in the microwave). Stir this until melted over medium heat. Then pour this over the ingredients in the large bowl and mix well. Pour this into the prepared dish and press it down firmly. Cover the dish and refrigerate it for 2 hours at least before slicing it.

Notes

1. These need to be kept refrigerated in an airtight container. They can also be frozen too.

2. You don’t “need” to do the sweetener. So, if you are not particularly into sweet granola bars or keto sweeteners you can skip it here. I like it both with and without. With it will taste similar to a “Chewy” granola bar.
