Chicken caprese Salad

This screams summer to me! I am headed off to my 4 year olds preschool picnic and offered to bring a main dish. Let’s see if it goes before the pizza the school is providing 🤣I always offer to bring a dish when I go to events and parties so that I will always have an option. This would w a great BBQ/party dish or lunch for the week(pack up dressing). -

🍅 Chicken Caprese Salad 🍅

Makes 10 Servings

1 Serving:182 Calories, 8.7g Fat, 1.9g Carbs, 18.8g Protein


1.5 lbs Cooked and Shredded Chicken

3.5 oz Mozzarella Pearls

10oz Cherry Tomatoes

1 large Avocado

20oz Spinach

20oz Romaine


Dressing:

3 Tbsp Olive Oil

4 Tbsp Red Wine Vinegar

2 Tbsp Parsley

2 tsp Basil

2 tsp Garlic

2 tsp Oregano

1 tsp Salt

Pepper to taste


Directions:

1. Combine all the dressing ingredients and mix well. Set aside.

2. In a bowl combine the other ingredients (I cook my chicken in an instant pot or crockpot with salt and pepper but you could also grill it).

3. Then mix in the dressing. Garnish with fresh basil!
