Keto4Karboholics Traditional Spanish Paella

Makes 6 1 Cup Servings

1 Serving:247 Calories, 6g Fat, 3g Carbs, 41g Protein

 

2 1/2 cup chicken broth

6 littleneck clams

6 mussels

½ pound shrimp, peeled and deveined

2 tablespoons extra virgin olive oil

1.5lbs chicken breast, cubbed

1/3 cup yellow onion, chopped

2 cloves garlic, minced

2 roma tomatoes, chopped

3 teaspoons salt

2 teaspoon saffron threads

½ teaspoon smoked paprika

½ teaspoon cracked pepper

4 cups of cooked cauliflower rice

¼ cup fresh parsley

Optional: 1 0z of roasted red peppers

lemon wedges for garnish

 

Directions:

1.     Put the chicken stock in a saucepan set over medium heat. Keep warm while you cook the meat.

2.     Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken pieces and shrimp. Cook for 5 minutes, stirring occasionally to brown the chicken on all sides.

3.     Add the remaining 1 tablespoon of oil, onion, garlic, tomatoes, salt, paprika, pepper, and saffron. Continue to sauté for another 7 minutes until the onions have softened.

4.     Pour ¾ cup of the broth mixture into the skillet. Stir in the riced cauliflower and simmer for 15 minutes covered.

5.     Bring the remaining broth to a boil, then add the clams and mussels. Cover and cook for 6-7 minutes, until the shells have opened up.

6.     Place the clams, and mussels into the paella. Add the optional red peppers. Cook for another 10 minutes then remove from the heat.

7.     Sprinkle the parsley over the top and serve.
