Creamy Spinach Artichoke Soup
Even though it’s 44F in NH today(which is essentially shorts weather 🤣 after this winter) I wanted some soup! So I whipped this Creamy ArtichokeSpinach Soup up in about 15 mins and it was sooo delicious! If you love the dip you will love the soup!
Keto4karboholics Creamy Spinach Artichoke Soup
Makes 10 1 Cup Servings
1 Serving: 296 Calories, 24.9g Fat, 5g Carbs, 8.3g Protein
2 Tablespoons Butter
4 Garlic Cloves, minced
15oz Spinach, chopped
1 teaspoon Salt
1 teaspoon Pepper
3 cups Chicken Broth(I used bone broth)
1 Cup of Water
14 ounce of frozen Artichoke Hearts, chopped
1½ cups Heavy Cream
1 - 8-ounce pkg. Cream Cheese
1 cup Parmesan Cheese(I grated my own)
In a large pot, melt butter over medium-high heat. Add garlic and saute for 1 minute.
Stir in spinach. Cook for 2-3 mins stirring frequently. Sprinkle with salt and pepper. I added an optional 2 tsp of pepper flakes!
Pour in chicken broth and artichoke hearts. Heat for 5-10 minutes.
Turn heat to LOW. Add heavy cream. Stir together. Add cream cheese (I cut it into cubes) and let melt slowly.
Stir in parmesan cheese.
Season according to taste. Sprinkle with parmesan cheese shavings.
