Almond Joy Donuts

Almond Joy Donuts🍩!! I am so happy to be home and back in the kitchen!! What better way get back in the swing then to start your morning with a cup of tea and a nice chocolatey donut?! Seriously they are so good that they are almost guaranteed to help boost your morning mood😆. And bonus- no long drive through line or crazy amounts of sugar to have one of these bad boys! I choose to make mini donuts (12 mini donuts vs 6 regular) so I get 2(one for each hand just like my toddler likes it😂).

🍩 Almond Joy Donuts 🍩 

Makes 6 Donuts or 12 Mini Donuts

1 Donut or 2 mini donuts: 327 Calories, 31g Fat, 1.9g Carbs, 8.8g Protein 

Start to table time: 20-25 mins


1 cup almond flour

1/3 cup butter, melted

1⁄2 Cup erythritol

4 eggs

2 tbsp heavy whipping cream 1 tsp baking powder

1/2 tsp vanilla extract

1 tsp almond extract


Glaze:

2 Tbsp butter, melted

1/4 Cup Chocolate Chips or bar chocolate( sugar free I used Choczero )

1 tsp vanilla extract

1/4 Cup Unsweetened coconut flakes

3 Tbsp sliced almonds


Directions:

1. Preheat your oven to 350 F.

2. Melt the butter.

3. Using a hand mixer and a medium bowl, blend the butter, cream and sweetener until smooth.

4. Add the eggs and vanilla and almond extract and blend until combined. Next add the almond flour and baking powder and mix well.

5. Spoon the dough into a well-greased donut pan (if you don’t have one you can make them in a cupcake/muffin pan).

6. Bake 15-18 minutes or until lightly browned. Remove from oven and let cool

7. In a small shallow bowl mix the glaze ingredients and microwave for 30 seconds until chocolate is smooth(you may need an extra 15-30 seconds). Add almond milk if you want a thinner glaze. Then dip the top of the donuts in the chocolate. Sprinkle coconut flakes and sliced almonds over the top. You may need to microwave the chocolate 15 seconds if it starts hardening so you can keep dipping. Drizzle any remaining chocolate over the top of the donuts.
