Keto Funfetti Cupcakes

Perfectly keto and INSANELY delicious!! Funfetti Cupcakes 🧁 A recipe from my current challenge that I knew I had to share! This is the perfect keto birthday cake recipe too! The cake is moist with a slight crumble (but don’t worry it won’t fall apart) and the frosting is AAMAZING. Creamy, smooth, and gives you childhood vibes.

K4K Funfetti Cupcakes

Makes 13 Cupcakes

1 Cupcake:376 Calories, 35g Fat, 3g Carbs, 7g Protein

8 Tbsp butter, room temp

3⁄4 Cup powdered erythritol

3 large eggs, room temp 1 1⁄2 tsp vanilla extract

1⁄2 Cup unsweetened almond milk

2 tsp baking powder

1⁄4 Cup coconut flour

2 Cups almond flour

1⁄2 Cup (3oz) white chocolate chips (sugar free)

3 Tbsp rainbow sugar free sprinkles (sugar free)

Frosting:

8 Tbps butter, room temp

8 oz cream cheese, softened

1 tsp vanilla extract

1⁄2 Cup powdered erythritol

1 Tbsp heavy cream

1⁄4 Cup (1.5oz) white chocolate chips (sugar free I use Choczero chips and you can use promo code Keto4karboholics to always get 10% off)

Directions:

1. Preheat the oven to 350F and line a cupcake tin with 13 liners.

2. In a large bowl blend the butter and erythritol together until creamy and smooth.

3. Mix in the eggs, vanilla extract, chips, and almond milk. I recommend using a hand mixer or stand mixer on high to get the batter smooth but you can also whisk it by hand. Add in the flours and baking powder and mix.

4. Add the sprinkles and hand fold them into the dough with a spoon/spatula.

5. Divide the batter evenly among the 13 cupcake liners and bake for 18-20 mins until the cupcakes are golden on the top.

6. While the cupcakes bake get to work on your frosting!

7. In a large bowl blend the butter, cream cheese, and vanilla extract on high until smooth.

8. Microwave the heavy cream and white chocolate chips for 35 seconds to melt the chips. Mix the melted chips until smooth then pour into the frosting almond with the sweetener and mix on high for 20 seconds.

9. When the cupcakes are done allow to completely cool before frosting them. You can sprinkle a little more sprinkles on top if you choose or leave them plain.
