Seriously OMG delicious πŸ˜‹

These may not look like much, but these OMG bars will have you saying OMG after one bite!! Almost like a snickers (especially if you use chunky peanut butter) without the carbs! A perfect dessert (or breakfast if you want to pair it with a cup of joe or tea😘). So don’t trip running to the kitchen to make these!!

OMG Bars

Makes 10 Bars

1 Serving: 264 Calories, 24g Fat, 4g Carbs, 4g Protein

Crust:

1⁄2 Cup almond flour

2 Tbsp coconut flour

1⁄4 Cup powdered erythritol

2 Tbsp butter, melted

1 Tbsp vanilla extract

1 egg

Peanut Layer:

1/4 cup Butter

6 Tbsp Erythritol

2 Tbsp Swerve Brown (or plain erythritol/monkfruit)

1/2 cup heavy cream

1 Tbsp vanilla extract

1/4 tsp xanthan Gum

1/4 tsp salt

1⁄4 Cup peanut butter

Topping:

1 Cup (3.5oz) of sugar free chocolate chips (@choczero )

2 Tbsp butter

Directions:

1. Preheat the oven to 350F.

2. Combine the crust ingredients in a small bowl. Mix well.

3. In 8x8 pan (or other similar sized oven safe dish) press the crust in by hand. And bake for 10-15 mins until golden. Keep an eye on the crust towards the 10 min mark.

4. Remove from the oven and allow to cool completely.

5. While the crust is cooling start in on the peanut butter layer. In a large pot add the ingredients from butter to salt. Stir over medium high heat and bring to a boil. Then reduce heat to a simmer for 1 min. Mix in the peanut butter. Remove from the stove and allow to cool for 5 mins. If your mixture separates toss it in the blender for 1 FULL min on high.

6. Pour the peanut butter mixture over the crust.

7. In a medium microwave safe bowl melt the chocolate chips and the butter for 30 sec at a time. Stir ever 30 seconds and repeat until smooth and melted. Pour over the peanut butter layer. Cover and freeze for 2 hours
