Fajita Stuffed Chicken

Makes 4 Servings

1 Serving: 290 Calories, 17g Fat, 4g Carbs, 28g Protein


4 chicken breasts

4 Tbsp of K4K Taco Seasoning

4 Tbsp Mayo (or olive oil but mayo does work better)

½ each red, yellow and green pepper, very thinly sliced

1/2 Large Tomato slice in half then thinly sliced

1/2cup shredded cheese

Cilantro (optional for garnish)

 Sour cream (for serving)

K4K Enchilada Sauce drizzled on top (optional)


1.     Preheat grill to med-high or oven to 375. Meanwhile, make horizontal cuts across each chicken breast (but do not cut all the way through!).

2.     Place chicken breasts in a large bowl and mix in mayo and taco seasoning. Mix well until covered.

3.     Add bell peppers to each cut, then put each breast on the grill.

4.     Cook chicken for 15 min. Remove and top with cheese, then grill another 5 min until cheese is melted. If cooking in the oven cover with aluminum foil and cook for 45 mins then take the foil off on the last 15 mins and add cheese.
