Keto4karboholics MAC and Cheese!!!
Buffalo Chicken Mac and Cheese for dinner!! This is a super easy dinner to make and can be adjusted to fit your macros very easily! So I make the buffalo chicken dip(https://www.keto4karboholics.com/new-blog/2018/2/1/buffalo-chicken-dip) and the Mac and Cheese separately. Then start with 1/2 cup of the Mac and cheese and top with buffalo chicken dip based on how much protein and fats you have available! I mixed in 1/4 cup of buffalo chicken dip! This was AMAZING and I think I have a new go to keto recipe for parties!
Keto4karboholics Keto Mac&Cheese
Makes 18 1/2 Cup Servings
1/2 Cup: 228 Calories, 18.9g Fats, 2.2g Carbs, 9.1g Protein
3 (12oz)bags of frozen Cauliflower or One Large Crown
4 Cups of Cheddar Cheese
1 Cup of Heavy Cream
1/2 Cup Water
8oz of Cream Cheese
2 1/2 tsp Ground mustard
1 Tbsp Garlic Powder
1 tsp Salt(more or less based on preference)
1 tsp Parsley
1/2 tsp Pepper
Place all ingredients into a crockpot and mix well. Cook on low for 4-5 hours stirring occasionally. Add 1tsp if Xanthan gum at the last 30 mins left of cooking to thicken if you desire.
Optional: put in a casserole dish, top with 1:4 cup crushed pork rinds, and bake at 400 for 10 mins for a crispy top layer!!
