Cheesy Beef Casserole (Low Carb/Keto/Gluten-Free)


Comfort food at its finest! Also a picky eater pleaser! My Cheesy Beef Casserole is sure to become a family favorite. I was planning on making chicken tikki masala but wanted something quicker(I will share that recipe tomorrow) so πŸ’₯ whipped this bad boy up! Cheesy Beef Casserole

Makes 5 Servings

1 Serving: 369 Calories, 23g Fat, 6g Carbs, 28g Protein

1 lbs 90/10 ground beef salt, to taste

pepper to taste

1⁄2 tsp oregano

1 tsp Italian seasoning 1 tsp onion powder

2 cloves chopped garlic 1⁄2 tsp paprika

8-ounce pureed tomatoes

1 cup chicken broth

12 oz cauliflower florets

4 oz cream cheese

1 tsp Xanthan gum (optional to thicken)

1⁄2 cup shredded cheddar cheese

1⁄2 cup shredded mozzarella cheese


1. Add the beef to a medium skillet and cook it, breaking it up as you do. Add three pinches of salt, along with the dry seasonings. Add the onions, tomatoes, chicken broth, and bring to a simmer, then add the cream cheese and stir until mixed in. Add optional xanthan gum here.

2. Steam the cauliflower. Drain it and add it to the sauce. Mix well then pour into a large oven safe baking dish (mine was 8x13) add cheese and with foil.

3. Bake at 400F for 10 mins. Remove foil and broil for 2 mins or until cheese is melted and bubbling.
