Perfect Keto Soup 🥣
I was trying to make a delicious creamy soup tonight and incorporate TONs of green veggies! So this delicious soup was created and I call it Perfect Keto Soup 🥣! Bacon, cheese, spinach, broccoli, and cauliflower!!! Plenty of Vitamin A and C!!
Perfect Keto Soup 🥣
Makes 10 1 Cup Servings
235 Calories, 17.6g Fat, 6.4g Carbs, 12.1g Protein
40oz of Chicken Broth
24oz of Cauliflower Rice
12oz of Steamed Broccoli Florets
6oz Baby Spinach
2 Cups Cheddar Cheese
5 Pieces of Thick Cut Bacon, Chopped
8oz Cream Cheese
3 Cloves of Garlic
Salt and Pepper to taste
1. Turn Instant Pot or pressure cooker to SAUTE and drizzle the olive oil; then add the onion and cook 2-3 minutes(If using a crockpot complete this step on the stove in a sauce pan on medium high heat).Then add the cauliflower rice, chicken stock, and salt. Lock the lid, use the MANUAL setting and cook on HIGH PRESSURE for 5 minutes. Quick release the pressure(if using a crockpot place all the ingredients in the crockpot and cook on high for 3 hours or low for 6 hours).
2. While the soup cooks, cut the cream cheese into cubes, grated sharp cheddar cheese, and cook and chop the bacon.
3. Check to make sure the cauliflower is very tender; then turn the Instant Pot to KEEP WARM. Use an immersion blender, blender, or food processor to puree the soup(If using a crockpot set temperature to warm and follow the above).
4. Add the grated cheese and cream cheese cubes and let them melt, then stir in the bacon and steamed broccoli to combine. Allow to cook sit for 15 minutes then add the spinach, stir well.
