Keto4Karboholics Loaded Faux-tato Soup(with Spinach)

Makes 11 1 Cup Servings

1 Serving: 247 calories, 19.3 fat, 4.2g carbs, 11.1g protein

 1/2 cup onion, chopped small

2 Tbsp olive oil

8 cups of cauliflower chopped

10 slices of thick cut bacon (and use 1/2 of the drippings!!!)

8 Cups of Spinach (optional but spinach has great micronutrients)

3 cups (24 oz.) chicken stock (I used two cups garlic infused chicken broth and one cup chicken stock. If you don’t use garlic infused add 1 Tbsp of garlic powder)

1 tsp. salt (more if you like)

pepper to taste (I added ½ tsp)

8 oz. cream cheese, cut into cubes

2 cups grated sharp cheddar cheese

Optional ½ tsp of xanthan gum( I wanted mine thicker)

1.Turn Instant Pot or pressure cooker to SAUTE and drizzle the olive oil; then add the onion and cook 2-3 minutes. Then add the chopped cauliflower, chicken stock, and salt. Lock the lid, use the MANUAL setting and cook on HIGH PRESSURE for 5 minutes. Quick release the pressure.

2. While the soup cooks, cut the cream cheese into cubes, grated sharp cheddar cheese, and cook and chop the bacon.

3. Check to make sure the cauliflower is very tender; then turn the Instant Pot to KEEP WARM.  Use an immersion blender, blender, or food processor to puree the soup.

4. Add the grated cheese and cream cheese cubes and let them melt, then stir to combine. Here you can add the xanthan gum if you want it thicker (then whisk well).

**You can also make this on the stove just cook the cauliflower first until very tender!!**
