8 chicken thighs

1 ½   teaspoon salt

1  teaspoon pepper

1 ½ Tablespoons of garlic powder

1 Tablespoon parsley

2 cups chicken broth

2 cups heavy cream

1 cup shredded cheddar cheese

4 cups spinach, chopped

4 Tablespoons butter

1/2 teaspoon xanthan gum


1.     Preheat oven to 375 degrees and line a baking sheet with parchment paper.

2.     Sprinkle ¼ teaspoon salt and ¼ teaspoon pepper on chicken thighs.

3.     Place in the oven and bake 40 to 45 minutes, or until chicken is cooked through.

4.     In the meantime, add butter to a large sauce pan and melt on medium heat.

5.     Add chicken stock and cream and bring to a boil.

6.     Once the sauce has come to a boil, add xanthan gum, garlic, parsley, salt, and pepper. Stir until thickened.

7.     After you’ve achieved your desired consistency, remove the sauce from the heat and add the chopped spinach. Place the chicken thighs in the sauce and allow to simmer for 10 mins.
