Keto Broccoli Cheddar Soup
It's fall in New England and the leaves are changing.. it's also 90 degrees for some weird reason! But never the less I want a nice thick creamy bowl of soup. Broccoli Cheddar Soup just like Panera's but hold the crazy carbs! Only 5g of carbs!!

Keto4Karboholic's Broccoli Cheddar Soup
2 Bags of Frozen Broccoli Florets or 2 Broccoli Heads
10 oz Cheddar Cheese
4 Tbsp Butter
1 tsp minced garlic
1 tsp xanthum gum
1/2 cup Onion
1/2 cup celery
3 cup chicken broth
1 cup Heavy Whipping Cream
salt and pepper
Steam Broccoli for 4 mins. Take 1 cup of broccoli put in a food processor or blender and blend for 30 seconds. Put that and the rest of the broccoli aside.
Add butter, onion, celery, salt and pepper to a sauce pan and cook until onions and celery are translucent.
Add broccoli(both blended and florets) and cook for additional 2-3 minutes or until broccoli turn bright green.
Add chicken broth and heavy whipping cream and bring to a boil.
Turn down to simmer and slowly add the cheese mixing as you add.
Once fully incorporated add anthem gum and stir until soup thickens.
Serve warm and enjoy!
